- Prions are proteins which encourage the mutation of other proteins, leading to cellular damage to body tissues
- Viruses can mutate and jump species (e.g. Avian Flu)
- Transmissable encephalopathies such spongyform encephalitis are a risk from the consumption of animal foods, especially their brain and spinal tissue
